Hamachi Kama is a yellowtail’s collar which is right above its gills and below their head. This part of the fish is very juicy as it is one of the fattiest parts. It is a good source of protein, omega-3 fatty acids, and vitamins.

What is the difference between Hamachi and Buri fish?

Both of them are yellowtails but are different in the age of when they are prepared. Hamachi fish are young yellowtails where Buri fishes are adult yellowtails.
